In a rainy day ... apple pie with coconut You know, spring is little madcap!
There are days when the sun shines high in the blue sky, the fragrance of flowers spreads in the air and the birds are singing among the leaves ... and then there are days when the sky is so gray at 10 am that you have the feeling that they are 8 in the evening, the rain continues to fall unabated, and it feels like being locked in the house, maybe magnificence on the couch, wrapped in the warmth of a blanket.
Last week, thanks to a rainy and dreary evening, I made this apple pie slightly different from the classic version. E 'was enriched with rice flour (I use it now in all the sweets I do: D), cream of yogurt and almond slivers, which creates a crisp contrast with the roundness given bad apples!

Apple pie with rice flour, cream of yogurt and almond flakes
Ingredients:

- 200 g flour 100 g
- rice flour 100 g sugar 75 g butter

- 3 eggs 1 / 2 cup of milk or 2 or 3 tablespoons of yogurt cream
- a sachet of baking powder
- 1 / 2 kg Apple
- flaked almonds to decorate
Procedure:
- Working for about 10 minutes, the butter and sugar, add egg yolks, flour, white rice, milk or yogurt, lievitoed finally the egg whites beaten stiff previously .
- Pour the mixture into a buttered and floured.
- Peel and cut each apple into 6 wedges and arrange in a circle sull'impasto.
- Add the flaked almonds.
- Bake at 150 degrees for about 40 minutes.
